do a bent wood circumference wrap for the sides...

Just curious here---wouldn't it be easier/quicker to just route a circle & fit the bottom in?
You wouldn't have a vertical seam & wouldn't be fighting spring back.

I'll have to try it someday.

I know I make my serving dishes/platters that way---flat bottom & routered out section glued on top. The good thing about that way is you now have a pattern to make more.

Trays are fun to make, are good gifts, a way to try new methods and a way to use up small pieces of wood. I have made many over the years and they have all been accepted well at holiday time.
For beginners they can be a way to learn in using different shop tools, and gluing techniques. Plus if you make mistakes it gives your mind an exercise in save mode, or just toss it and start over, nothing lost.
Cutting boards and trays are similar in the enjoyment of making something useful and attractive.

w/ butcher block construction you will have a boatload of seams...
if you have to fight spring back your material is too thick relative to the species and radius or you aren't follow the how to instructions or both......
correctly done, you won't be "fighting" spring back...

go w/ staves...
spline them and show the splines as an added detail/accent and for character...
to get the side to bottom radii, lightly dish the bottom w/ a bowl bit...
these are pictures of bowls; change the height of the sides, don't dish the bottom, add wooden or metal carrying handles and you have a round serving tray...
no lathe??? spoke shave the OD round or leave them flat or a blend of flats and rounds...

use birdsmouth joinery...
these can be splined also...
make the sides perpendicular or slanted to the bottom...
no lathe??? spoke shave the OD round or leave them flat or a blend of flats and rounded over prouds...

stuff the steam bending you say...
do the wrap in multiple layers of veneer instead of thicker layers of bent wood...
you could change the species as you wrap for a host of different color bands...

now that you made round serving trays - use the same to make a rectangular, square or polygon shaped one...
the birdsmouth technique/method might be a little difficult to apply except for the polygon......
