For trimming bevels on the end of a leg or tenon I find a bevel up low angle block plane the best tool. It also works best if skewed with an upswept motion at the far corner to prevent tearout. It also works best for easing the edges of boards. I needed to make a tote for one of my planes and I tried a variety of tools trying to shape it including a hook knife. The tool that worked best was a 1/2" wide chisel. 90% of the tote was made by paring the waste off with it.
