Traditionally it was done with hide glue. Hide glue has the advantages that it won't creep like modern pva type glues will and it shrinks as it dries so it pulls the veneer down tighter as it does. But the easiest is to use contact cement. https://handymantips.org/how-to-apply-wood-veneer/ When I use contact cement to do laminates I use waxed paper between the substrate and laminate to position the sheet and then I pull out a piece at a time and stick it down as I go. Contact cement doesn't stick to waxed paper. Be careful not to stick the laminate or veneer down too close to the next sheet of paper or it can be very hard to pull it out.

Tite Bond has a brown Panel glue that I have used for gluing wood veneer, that works quite well. It came in a 1QT. jug. I used a full sized caul to cover what I was glueing and lots of clamps. It has been awhile, but I think I used a small paint roller to even out the glue on both the subbase and back of the veneer.

Hide glue is also a good choice because it won't mess up the finishing (particularly the staining)if it seeps through. That's a consideration with burl with crazy grain direction and voids.
